About the Author
Author Jeanne Tiberio, MS, RD has been a vegetarian for over twenty years. As a registered dietitian and a nutrition educator, Jeanne wanted healthy vegetarian recipes that reflected homey, familiar foods that were easy for anyone to prepare. Jeanne is a veteran speaker about vegetarianism, reducing cardiovascular risk, disability issues, and eating disorders. She received her Bachelors of Science in Nutrition Biochemistry from the University of New Hampshire and earned her Masters in Food Science and Nutrition from Cornell University. She uses her unique experiences of long-term vegetarianism as well as her personal journey with muscular dystrophy to help others face and conquer lifestyle challenges.
